yes you can use brass. the fittings that come with the DO kits have components (predominantly the nozzles, which is where the most pressure build up is since its such a small orifice as opposed to the punp outlet) so yes i would say you are fine to use brass. also not to mention that brass is relatively soft, so it will provide a better seal as well.

as for your stainless line, theres no need for it unless its what you really want to do. the poly line that comes with the kits is enough to support the pressure of the pump. you wont have a problem with it, but if you MUST use stainless line go ahead, it wont be cheap tho.

as for your nozzle size, you should use the nozzle size calculator they have here on the website...it works pretty well and will definitley get you very close to where you want to be. you might have to go up or down one size depending on how your tune is set up, but it will certainly point you in the right direction.
